To get to the ‘La Torre’ launch in town, it is nicest to just hike up. If you hike it in under 45 min you will have a well-deserved flight, and beer afterwards. You get there by walking along main road until you get to a large stone gate (19.1832939, -100.1206525). Then walk up the swirling cobblestone streets. Eventually it will turn to a dirt road. There will be a left turn with a building/wall and immediately after it there is a steep trail (starts about here: 19.1835181, -100.1175576) that goes effectively straight up to Torre.
